Bibliometric analysis of development studies of vegetable drinks based on oats, rice and almonds

Abstract

The search for alternatives to milk and other animal derivatives has increased significantly in recent years, so that new studies and products have been developed specifically to replace them. This study aimed to carry out a bibliometric research on vegetable beverages produced from rice, oats or almonds. For the realization, were used as keywords “Vegetable milk” or “Vegetable drink” to restrict the work on this topic? and “Oat” or “Rice” or “Almond” for restrictions on which vegetable bases were prescribed. Most of the studies related to the theme were between the years 2018 and 2022, since there was no research in 2019, however, there is a tendency between 2020 and 2022 for growth in the number of publications. Regarding the location of the searches, 33% of them are located in the Asian continent, but specifically in South Korea and Thailand. Regarding newspapers, Foods magazine has the highest share of publications, being the second magazine with the highest impact factor. The biggest impact factor was related to the journals that published articles on the subject for 7,425 members of the Food Research International journal. Although few studies were found, the theme is constantly growing and has possibilities for expansion.
